Student Story: Chef Eduardo Villarreal

​ Meet Chef Eduardo Villarreal. Eduardo and his wife, Neloi are the owners of Mariscos Villarreal Restaurant in Grand Island, NE. Eduardo and Neloi both grew up in the resort town of Bucerias Nayarit which is located on Mexico’s Pacific Coast. Their move to Grand Island provided them with the opportunity to pursue their dream of opening their own seafood restaurant. Both are students at the Literacy Council where they are working diligently to become fluent in English so that they are able to communicate better with their customers and provide the best customer service possible.

A World Undivided: Judy and Khadija

During the month of August in Nebraska, when the corn is at its peak, it is hard to ignore the influence of agriculture in our Midwestern state. We are always so happy to find the quirks of the universe when world's collide at the Literacy Council--that is when beautiful connections and change can happen. Tutor Judy Mettenbrink and student Khadija Aboudaim once lived continents apart, in two entirely different worlds. Yet they both shared farming as a means of prosperity. Judy hails from the Grand Island area, and Khadija from Northern Sudan but both earned their livelihoods from agriculture.
